These cookies are soft and chewy in the middle and crisp around the edges and will make a nice addition to any holiday gathering. They can be cut into any shape or size that you like.

1 1/2 C unsalted better softened

3/4 C granulated sugar

1/2 C light brown sugar packed

1Tbsp vanilla extract

2 tsp ground cardamom

1/2 tsp salt

1 large egg

41/2 C all purpose flour

Prehaeat oven to 350 F

Beat together butter, sugars, vanilla and cardamom in a large mixing bowl until smooth and creamy. Add egg and mix on medium speed until fluffy. On low speed add flour a bit at at time and mix until just blended.

Divide the dough into 3 pieces and form each into a disk about 1 inch thick and wrap tightly with film wrap. Chill for about 1 hour or until firm to the touch.

After chilling roll out one disk at a time to about 1/4 inch thickness and dip your cookie cutter into a bit of flour press firmly down on the dough. Any left over dough can be rolled out again, however you need to pay special attention to how much flour is added in

Bake for 12 to 14 minutes for smaller cookies and 15 to 18 minutes for larger shapes. Cookies should be a light brown around the edges, but still soft to the touch. Place pan on a wire rack for 1 to 3 minutes to cool and then remove cookies to rack to cool completely.

Decorative icing

Mix together 3 1/4 C confectioners sugar and 1/4 C egg whites in a large mixing bowl on low speed until just combined.Add 1/3 cup water and blend, turn mixer to high speed and beat icing until it is thick and white(about 8 minutes) Add a few drops of food coloring to tint icing.
