These chewy moist cookies are wonderful with a hot cup of coffee or a cold glass of milk and need not be confined to the holiday season.

2 1/4 C all purpose flour

2 tsp baking soda

1 tsp cinnamon

1 1/4 teasp ground cginger

1/2 tsp ground cloves

1/4 tsp salt

1 C brown sugar, firmly packed

3/4 (1 1/2 sticks) butter softened to room temp.

1/4 C molasses( You may substitute with honey)

1 large egg

2/3 cup granulated sugar

Sift together flour, cinnamon, soda, ginger and cloves into a medium sized bowl and mix.

Cream together brown sugar, egg, molasses and egg using an electric mixer on high speed until light and creamy. Scrape sides of bowl occasionally to insure proper mixing. Beat in flour mixture 1/2 cup at a time.

Form into a large ball and cover. Refrigerate for about 1 1/2 hours or until firm.

Preheat your oven to 375 F and lightly grease cookie sheets.

Roll dough into 1 inch balls and place on prepared sheets. Dip the bottom of a water glass into granulated sugar and use it to flatten cookies slightly. Bake until edges are lightly browned, usually about 6 to 7 minutes. Cool on cookie sheets for 2 minutes and then remove to a wire rack to complete cooling.
