These wonderfully chewy bars combine the salty taste of the peanuts with the sweet taste of marshmallows and the crisp texture of the rice cereal. They are a great snack to have on hand when you have guests or just to keep on hand for the kids. When my daughters want a candy bar these are a perfect substitute, and are much better for them as you know what is in them.

1 1/2 C all purpose purpose flour

1/2 C firmly packed brown sugar

3/4 C butter divided

3 cups miniature marshmallows

2 cups peanut butter chips

2/3 C corn syrup

2 tsp vanilla extract

2 cups crisps crisp rice cereal

2 C salted peanuts

Preheat oven to 350 F

In a mixing bowl, combine butter, flour and brown sugar. press into a 13×9 baking pan and bake for 10 to 15 minutes until lightly browned.

Sprinkle marshmallows on top and return to the oven for 3 to minutes or until the marshmallows begin to melt. set aside to cool

In a large saucepan, cook the peanut butter chips, corn syrup, vanilla and remaining butter until smooth, stirring constantly. Remove from heat and stir in peanuts and cereal. pour over prepared crust spreading to cover completely.

Place pan on wire rack to cool before cutting.
