This is a very moist rich cake and goes well with your morning coffee or with brunch. You can use most any fruit that you like or simply spice it up a bit with cinnamon and nutmeg, or baking cocoa. Dried apricots work well in place of the golden raisins.

1 C milk

2/3 C shortening

1 1/2 tsp salt

2 packages of active dry yeast

1/2 C lukewarm water

4 large eggs beaten

2 tsp dried orange zest

4 1/2 C all purpose flour

2 C golden raisins or the dried fruit of your choice

1/4 C chopped almonds

Scald your milk in a saucepan over medium to high heat, add shortening, sugar and salt and cool stirring constantly until sugar is completely dissolved. Let stand until cooled

Place water in a large mixing bowl and dissolve yeast( an extra tsp of sugar will help activate yeast). After dissolved add the milk mixture and mix well. Add eggs and orange zest to the mixture. slowly add flour and mix until smooth.

Cover well and let dough stand for at least 6 hours. After standing you will need to punch dough down. Add the dried fruit of your choice and mix the dough until it is smooth and elastic.

Grease a fluted tube pan(such as you would use for an angel food cake) and spoon the dough into pan. Let rise for about one hour.

While rising, preheat oven to 375 F. After 1 hour bake until bread is golden brown on top . This will usually take from 30 to 40 minutes. Cool in pan for 5 minutes and then transfer to a wire rack to cool completely.
