This a very tender cookie, much like a shortbread but the added pecans give it a wonderful flavor and it adds a nice touch to any cookie tray, while being fairly simple to make.

1 C (2 sticks) butter softened

1/2 cup confectioners sugar

2 1/2 C all purpose flour

1/4 teaspoon salt

1 C finely chopped pecans

4 oz semi sweet chocolate (may substitute milk chocolate or white chocolate

1 tsp butter

Peheat your oven to 350 F

Mix softened butter, confectioners sugar and vanilla extract in a medium sized bowl. Beat with an electric mixer until smooth and creamy and it lightens in color somewhat.

Add salt and flour, after mixing well, fold in pecans.

Take small pinches of dough and roll into 1 inch balls. Shape balls into crescents by rolling in your hand until they form a long srip and then curve them into a moon shape. Arrange them on a baking sheet. Bake until just set but not brown. This will usually take from 10 to 13 minutes.

Cool the cookies on the baking sheet for about 2 minutes and then move to a wire rack to cool completely.

In a double boiler melt chocolate, and add the tsp of butter stirring constantly until well blended. place on waxed paper or parchment let cool for 20 to 25 minutes. Store in an airtight container.

If you want to dress these cookies up a bit, try dipping them entirely in chocolate and then rolling them in additional chopped pecans.
