To add a special touch to this dish, try toasting the pecans first. Just place them in a cast iron skillet with about 1 Tbsp of margarine and a sprinkle of sugar. Cook over medium to low heat stirring frequently until crisp and fragrant. This salad is wonderful after a filling holiday dinner but since it is served frozen it is also a welcome treat on a warm summer day.

1 C chopped Pecans

3/4 C peaches in syrup drained

1/2 C maraschino cherries

1/4 C apricots in syrup drained

1/2 C crushed pineapple in syrup

1/3 C confectioners sugar

1/4 tsp salt

1/4 cup mini marshmallows

3/4 C whipping cream cream

Combine pecans, chopped maraschino cherries, apricot and confectioners sugar along with salt in a medium bowl and mix carefully.

Cut each marshmallow in half and add to fruit mixture

Pour cream into a medium sized mixing bowl using an electric mixer on high speed, beat until cream forms stiff peaks, and fold into fruit mixture.

Spoon into individual molds or dishes and freeze until firm, this will usually take up to 2 hours.

When firm, dip each mold into warm water for 1 to 2 seconds and turn onto plate and garnish if desired. Serve immediately.
