These cookies are very easy to make and will catch the eye at any cookie exchange or holiday bake sale. For any fan of peanut butter cookies, that bit of extra chocolate will be a huge hit.
1 C creamy peanut butter
1/2 C butter softened to room temp
1/2 C shortening
1 C sugar
1 C firmly packed brown sugar
2 eggs
2 1/2 C all purpose flour
1 1/2 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
8 oz. semi-sweet chocolate chips
3/4 C finely ground salted peanuts
Using a large mixing bowl, cream together the peanut butter, shortening, butter, and sugars until light and fluffy. Add the eggs one at a time making sure to beat well after each addition. Combine dry ingredients and gradually add to creamed mixture.
Shape into 2 inch logs and place 2 inches apart onto ungreased baking sheets. bake at 350 F for about 8 to 10 minutes or until lightly browned. Remove and place on wire racks to cool.
In microwave or double boiler melt chocolate chips stirring until smooth. Dip one end of each cookie into chocolate and shake off any excess. Dip into peanuts and place on waxed paper until chocolate sets. Makes from 7 to 8 doz cookies.
