This Pie is wonderful for entertaining because it can be made a few days ahead and stores well for up to a week as long as it is covered well. For something a bit different try adding 1/2 cup of peanut butter to the mixture. It will take a bit longer to set but the taste is worth the wait.

1/2 C chocolate syrup

1/2 C semi-sweet chocolate chips

2 C crisp rice cereal

2/3 C sour cream

1 quart chocolate chip ice cream softened.

Coat the bottom of an 8 inch pie pan lightly with butter

Combine chocolate syrup and chocolate chips in a small microwave safe bowl and microwave on high until hot. This should take about 45 seconds to 1 minute. Stir until smooth and reserve 1/4 C of mixture.

Combine remaining mixture and cereal in a medium bowl and mix to coat the cereal. Press into pie pan and freeze until firm.

Mix reserved chocolate mixture and sour cream in a small bowl. spread half the ice cream into the prepared pie pan and drizzle half of the sour cream mixture over top.

top with the remaining ice cream and drizzle with the other half of the sour cream mixture. Place fie in freezer for about 1 to 1/2 hours or until firm. Serve immediately.
