The smell of apples cooking always reminds me of the Holidays and these very rich bars are wonderful, they combine the Holiday spirit with just a touch of remembering summer and fairs or carnivals because of the caramel apple flavor.

1 C packed dark brown sugar

1 stick butter softened to room temperature

1 3/4 C quick cooking oats (Do not use instants oats)

3/4 C finely chopped Pecans (hazelnuts also work well)

3/4 tsp salt

4 1/2 C Granny Smith apples(usually 4 to 5 medium sized apples)

3 1/2 Tbsp all purpose flour

1 jar caramel ice cream topping

Preheat your oven to 375 F and grease a 9×13 baking pan

In a medium sized mixng bowl combine sugar and butter. With an electric mixer, beat until creamy, add oats, salt and nut and mix well. Reserve one cup of the oat mixture

Firmly pack the remaining oat mixture into the bottom of prepared baking pan.

Place apples and flour into a medium sized mixing bowl and toss, making sure that apples are coated well. Place apples in a layer over oat mixture.

Drizzle caramel topping over the apples in a fine stream and sprinkle the remaining oat mixture over the top.

Bake for 20 to 25 minutes. Let squares cool in pan and cut into 12 to 16 squares.

For a great dessert, serve warm with a scoop of vanilla ice cream and a bit more caramel sauce.
