Now that winter is coming one of the things we can do for our families is to make hot soups and stews that are hearty healthful ways for them to warm up after a day of skating or sledding, or just the perfect meal, when teamed with a loaf of home baked whole grain bread.

Tortellini is a small pasta, usually filled that is sometimes made of whole grain, and is not only tasty but is also remarkably, when taking into consideration the rich flavor of this soup, very healthful.

This is one of those meals that you will eat and think the entire time you are eating, “this can’t be good for me”.

Two varieties are listed here for your convenience and personal choice, one which is meatless, and the other which contains chicken.

Meatless Tortellini

* 1-1/4 cups water
* 1 14-1/2-ounce can diced tomatoes, undrained
* 1 cup reduced-sodium chicken broth
* 2 teaspoons snipped fresh basil or 1/2 teaspoon dried basil, crushed
* 1 teaspoon snipped fresh oregano or 1/4 teaspoon dried oregano, crushed
* 1/8 teaspoon pepper
* 2 cups loose-pack frozen broccoli, cauliflower and carrots (about 1/2 of a 16-ounce package)
* 1-1/4 cups refrigerated cheese tortellini (about 1/2 of a 9-ounce package)
* 1 tablespoon snipped fresh parsley


1. In a medium saucepan, combine the water, undrained tomatoes, chicken broth, basil, oregano and pepper. Bring to boiling. Stir in frozen vegetables and tortellini.

2. Return to boiling; reduce heat. Simmer, uncovered, for 5 to 6 minutes or until tortellini are tender. Stir in parsley. Makes 4 to 5 side-dish servings.


6 c. water
3 (10 3/4 oz.) cans condensed chicken broth
1 (10 3/4 oz.) can cream of chicken soup
2 c. diced chicken meat
1 c. chopped onions
1/2 c. dry vermouth or water
2 garlic cloves, minced
1/2 tsp. basil
1/2 tsp. oregano leaves
2 c. tortellini
3 c. frozen mixed vegetables
Grated Parmesan cheese

In large Dutch oven, combine water, chicken broth, soup, chicken, onions, vermouth, garlic, basil and oregano. Bring to boil; simmer uncovered 30 minutes. Add tortellini and vegetables. Simmer an additional 10 minutes. Serve with cheese. Makes 10 (1 1/2 cup) servings.
