These are a delightful part of a weekend brunch, the recipe is short and simple and the taste is simply delicious. Raspberry muffin recipes are uncommon, which is strange in that they have a superb taste. Made the night before and heated for about ten seconds in a microwave Raspberry streusel muffins come back to the fresh warm just from the oven state and are perfect for a fast weekday breakfast as well.
Ingredients:
1/2 cup butter
1/2 cup sugar
1 egg
1 tsp vanilla
1/2 cup milk
1/2 cup sour cream
1/2 tsp baking powder
1/2 tsp cinnamon
2 cups flour
1 cup raspberries
FOR THE TOPPING
1/2 cup flour
1/2 cup quick cooking oats
1/3 cup sugar
1/2 tsp cinnamon
1/8 tsp salt
6 tablespoons butter or margarine.
Cream the butter and 1/2 cup sugar in a bowl til fluffy and add the egg, vanilla, milk and sour cream.
mix together the baking powder, 1/2 tsp cinnamon and 2 cups flour.
Fold in the raspberries and spoon into muffin cups
mix flour, oats, sugar, cinnamon and salt, and using a fork or pastry cutter, cut the margarine into the mixture.
Sprinkle the resultant streusel on top of each muffin.
bake at 375 for 20 to 25 minutes.
