I love no bake cookies but to be honest they didn’t always turn out for me, so I rather let them fall by the wayside as far as making them. One day as i played around with recipes, I began to work with this one, to find an easier way to make them and one that didn’t go flat for me.

Being less than a fan of peanut butter, I don’t add it to these, however you certainly can do so.. they are in fact still delicious without it and they truly never do fail.

I adapted this recipe from one that I used to make old fashioned fudge and it just can’t be beaten for speed and always working, no matter what the humidity or climate.

To make no bake cookies you will need

1/2 cup butter

1/2 cup canned milk

1/4 cup white karo corn syrup.

8 ounce bag of chocolate chips

2-3 cups oatmeal

Dissolve the sugar in the milk and turn on a medium fire, adding the butter and karo

Cook stirring constantly until it reaches the soft ball stage. (when dropped into a cup of cold water it holds together)

remove from heat and stir in the chocolate chips tile they are melted through

add the oatmeal until the consistency is right for you to be able to drop them from a spoon/

At this point you will want to work rapidly to make sure that you drop them all onto waxed paper by teaspoon fulls before they are cold.

(*if you tend to like peanut butter in the cookies, when you remove the pan from the heat, add a 1/2 cup peanut butter as well as the chocolate chips.

variations, add nuts, or raisins after the oatmeal or add graham cracker cereal in place of the oat meal
