The upcoming holidays mean turkey, lots and lots of turkey. While turkey dinner is always a hit with the family, there is always the problem that after two days of turkey everyone is tired of it. With the following recipes, the family looks as forward to leftovers as they do the actual dinner.

Turkey Hash (The good thing about this dish is that it uses lots of what is left.)


cubed cooked turkey
turkey gravey(canned works too)
chopped onion or green onion
precooked stuffing
1 bag frozen cubed hash brown potatoes
celery salt, salt, pepper
2 tablespoons butter
Preheat the oven to 350. In a large glass baking pan add the turkey, onion, and potatoes. Add celery salt, salt, and pepper to taste. Warm the gravey and pour into the baking pan. Stir and spread evenly in the pan. Crumble the stuffing over the top. Cut the butter and scatter over the top of the stuffing. Place in the oven and cook for one hour at 350 until the potatoes are soft.

Turkey Tetrazzini (With all the cheese in there you know it has to be good.)


2 cups broken uncooked spaghetti noodles
2 chicken bouillon cubes
3/4 cups boiling water
1 can cream of mushroom soup
1/8 teaspoon celery salt
1/8 teaspoon pepper
1 1/2 cups cooked turkey
1 small onion
1 1/2 cups shreded chedar cheese, divided
Preheat the oven to 350. Cook broken noodles as directed on the package. Drain. Place in a large glass baking dish. Add the turkey and onion. Mix. In a pan, add the bouillon cubes to the boiling water until they disolve. Stir in the cream of mushroom soup, salt, and pepper. Add the soup mixture to the noodle mixture. Add 1 cup of the cheese and mix well. Spread evenly in pan and sprinkle remaining cheese over the top. Bake at 350 for 40 minutes.

Turkey Salad (This is great spread over bread to make a sandwich or just on crackers for a snack.)
cooked diced turkey
chopped celery
chopped green onion
Miracle Whip
Add all ingredients in what proportions you prefer. I like to have about 2:1, turkey to veggies. Add enough Miracle Whip to make it spreadable. Enjoy.
