We all love them and they can be made using so many techniques that you can find one to suit your range of ability as well as the time and ingredients you have available to you.

However, as with most things, once you get the techniques down, even the most difficult become do-able.

That is particularly true of this favorite, which is a bit fussy to make but well worth your time. Named after the pale slim fingers of the fairy tale princesses, these are light and airy, but oh so delicious.


2/3 cups of all purpose flour

pinch of salt

4 eggs separated

1/2 cup granulated sugar

1/2 tsp vanilla extract

confectioners sugar for sprinking

Preheat your oven to 300 F

grease lightly and flour two baking sheets and shake off the excess flour

Sift the flour and salt together

beat egg yolks til lemony and thick with half the sugar.

In another bowl, beat egg whites til they raise peaks when the beater is lifted

beat in remaining sugar into these til it is glossy

Sift the flour mixture over the yolks, and spoon a dollop of the egg white mixture on the top of it.carfully folding it into the yolk mixture.

add vanilla and mix and then fold in remaining egg whites.

spoon the batter into a pastry bag fitted with a plain or star shaped nozzle.

pipe four inch long lines onto a prepared baking sheets, making sure that they are about one inch apart on the sheet

sift confectioners sugar over the top.

bake for about twenty minutes at 300 til they are crusty on the outside but still soft in the center.

allow to cool on the baking sheet.
