Winter is coming and with it, the chill that prevails when you have to work outdoors.Whether you live in the north or the south, winter winds can certainly chill you and this hot soup, along with a loaf of bread or hot cornbread is just what the doctor ordered to warm you up and given you that just ate something wonderful sense of well being. Filled with ham and the lovely taste of bacon and cheese, it just can’t be beaten on a cold day.

This is my own recipe and you can adjust the seasonings and garnishes as you like to create your own version.

10 large potatoes
10 slices Kraft Deli Deluxe Cheese
Teaspoon of salt
1 cup cubed smoked ham
3 slices of bacon
1/4 teaspoon of pepper
5 green onions chopped
2 carrots chopped.

1 cup grated monterey jack cheese
1/4 cup bacon, fried crisp and crumbled
5 green onion tops chopped.
1/2 cup milk
1/4 cup margarine or butter
Corn starch for thickening

Peel and cube the potatoes, and immerse them in water along with the chopped shallots or green onions, carrot pieces and bacon and ham cubes.

boil til potatoes and carrots are tender.

Remove the bacon and set aside.

Add the slices of cheese, milk and margarine and stir until cheese is melted.

Mix 1/4 cup corn starch with a few tablespoons of water to make a thickener such as you would use for gravy. Stir in while potato soup is still boiling.

when soup is about the consistency of a thin gravy it is thickened enough.
Ladle into bowls, garnish with chopped onion, bacon and monterey jack cheese.
If desired, set bowl under the broiler for about one mnute to melt the cheese.
