Chocolate Spritz cookies are among my favorite types of holiday cookies because of the ease in producing them in vast numbers.
Using the cookie press, which you can find, if you don’t have one currently at nearly any good baking or department store, with a multitude of plates to produce your cookies in any style you like, or add new plates to the press to permit you to make ever more shapes and styles.

A super place to shop for cooking and baking supplies is Kitchen Krafts who can furnish you with literally anything you might want to use in the kitchen, up to and including the cookie press it will take to make these cookies.

Yield: Makes about 60
1-1/4 cups butter
3/4 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs
3-1/4 cups all-purpose flour
3/4 cups cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 375 F. In a large mixing bowl with an electric mixer, beat butter and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. In another bowl, sift together flour, cocoa powder, baking soda and salt. Gradually stir flour mixture into butter mixture. Shape dough into a log and place in your cookie press.

Press cookies out onto an ungreased baking sheet. Bake for 10 to 12 minutes. Remove to wire racks to cool completely.

Decorate with sprinkles, candied cherries, melted white chocolate, or sandwich with vanilla frosting.
