Vegetables, green onion and cubed turkey are cooked together in a savory gravy and then topped with cheesy crusted biscuits in this super recipe. I found this disguised as a vegetarian recipe and adapted it to my own likes and dislikes, and came up with this means to use all that leftover turkey that Thanksgiving and Christmas gives us.
I do love recipes for leftover turkey because we all like to try new things, and we all have the turkey leftovers that we don’t want to waste after the huge Thanksgiving feasts we indulged in.
This is suitable for a day after Thanksgiving meal, but also a “warm you up” wintertime meal.
If you like, you can substitute, if you select a decent cut of round steak, cube and brown it, and use 1 and 1/2 cup of beef boullion rather than the turkey broth.
If you have no leftover turkey, chicken breasts cubed will work just as well.
1 tbsp olive oil
1 clove of garlic, crushed
2 celery stalks, chopped
8 green onions, sliced
2 carrots, sliced
1/2 cup frozen or canned green beans
1/2 cup sliced mushrooms (optional)
2 medium potatoes diced(about two cups)
14 ounce can diced tomatoes
1/4 cup green bell pepper diced (optional)
1/4 tsp italian seasoning herbs
2 tbsp cornstarch
3 tbsp water
1 and 1/2 cup chicken broth or turkey broth
TOPPING:
2 cups self rising flour
5 tablespoons butter or crisco
1 cup grated cheddar or colby cheese
1 tsp oregano
1 egg slightly beaten
2/3 cup milk
pinch of salt.
Heat the oil in a skillet and sautee the garlic and onion for about five minutes
add the vegetables and cook about 3 minutes
stir water and cornstarch to make a thin paste and stir into the broth
add all ingredients into a casserole dish and cover.
preheat oven to 350 and bake for about 25 minutes.
To make topping, sift flour and salt together, and rub or cut the butter in. then stir in most of the cheese, and and the oregano.
add milk and egg to make a soft dough
knead slightly and roll out
cut into 1/2 inch thick and about 2 inch circles with cutter
arrange around the outside of the casserole and return to the oven for about 15 minutes.
