These tiny puffs make a perfect starter for any meal or gathering and you can also substitute the ham filling with chicken or turkey salad for a brunch or with pudding for a light dessert or snack. Their elegant look belies the fact that they are quite simple to make and take very little time, so they can be made at the last minute for those who are pressed for time.

3 4 1/2 oz cans of deviled ham, or 13 oz fresh ham grated or chopped finely.

1/3 C sour cream

1 jar,(2 oz) pimentos drained

1/4 C celery finely chopped

1 Tbsp prepared horseradish

3/4 tsp onion salt

3/4 tsp black pepper

1 C water

1 stick butter

1C all purpose flour

1/2 tsp salt

4 large eggs

In a medium bowl combine the ham, sour cream, pimentos, celery, horseradish, onion salt, and pepper, mix well and chill for one hour.

Preheat oven to 400 F

Place water and butter in a medium saucepan and bring to a rolling boil over high heat. Gradually stir in flour and salt. Making sure to stir continually cook over low heat until this mixture forms a ball. This will take from one to two minutes. Remove from heat and add eggs stirring until dough is smooth and glossy.

Drop by rounded teaspoonfuls onto baking sheets. Bake until puffed and golden brown, about 20 to 25 minutes. Move to wire rack to cool.

Cut off top of puff and set aside. Remove center of puff and discard. Spoon 1 rounded tsp of ham mixture into each puff and replace top.
