This is a heavier bread, hearty enough to stand up to the thickest soups and make an impression. Dakota Harvest Bread is a sweet bread, but still savory enough to be used with a meal rather than as a dessert bread.
Harvest bread uses a lot of natural ingredients, with the bread featuring natural seeds, veggies and oils, and has a very distinctive taste. Not only delicious, its also a very healthy bread.
Ingredients
3 eggs
1 cup sunflower oil
2 cups sugar
2 cups peeled zucchini
1 tablespoon molasses
1 tablespoon vanilla
3 cups sifted unbleached flour
1/4 teaspoon soda
1 tablespoon cinnamon
1 teaspoon salt
1/2 cup sunflower seeds, shelled
Beat eggs in bowl til thick and lemony, and add oil.
Beat in sugar, zucchini, molasses, and vanilla
Sift the flour, soda, cinnamon and salt together.
Add to the batter and mix well
Stir in the sunflower seeds and spoon into two greased loaf pans
Bake at 350 for about 50 minutes
cool in pans for twenty minutes before removing
serve warm or cold with honey or butter.
