A traditional American favorite, corn pudding has been on the menu for Thanksgiving and Christmas for a hundred years.,
This corn pudding features a slightly sweet top, that is a good complement for the texture of the corn.
Corn pudding can be one of several varieties, some of them dessert like in nature, or this one, more of a side dish, or vegetable.
INGREDIENTS:
* 1 can whole kernel corn, drained
* 2 eggs, beaten slightly
* 1 cup milk
* 1 teaspoon baking powder
* 2 tablespoons flour
* Topping, below
PREPARATION:
Mix all ingredients together and place in a 1 1/2 quart baking dish. Bake in a 325° oven for 45 minutes, pour topping over and serve.
Topping
* 1/2 cup water
* 1/2 cup margarine
* 2 tablespoons flour
* 1/2 cup sugar
Melt margarine; add flour, water and sugar.
