I love Rolo candies and I absolutely think chocolate should be a food group. Cookies are the perfect after dinner treat and having something that combines both chocolate and caramel in a cookie is heaven to me.
This gives the best of both worlds in a delightful cookie that is perfect for home consumption and pretty enough for gift giving at Christmas time. 2 and 1/2 cups flour
3/4 cups baking cocoa
1 tsp baking soda
1 cup sugar
1 cup packed brown sugar
1 cup butter
2 tsp vanilla
2 eggs
1 9 ounce package rollo candies
1 tablespoon sugar
4 ounces white chocolate, melted
combine flour, cocoa and soda in a bowl, mix well and set aside
cream the sugars, and the butter or margarine, until light, add vanilla and eggs and mix well
add flour mis and stir well
shape cookies into balls around one of the rolo candies and cover it completely
coat one side of each ball with sugar
place uncoated side down on ungreased cookie sheet
bake at 375 til they start to crack on top.
do not overbake
drizzle melted white chocolate over some of the cookies and coat others in the unsweetened cocoa
yield is 4 dozen cookies
