These loaves of cranberry applesauce bread brown up so nicely that they are beautiful for gift giving or just for your own table, and the taste is just out of the world. The sweetness of the apples is offset by the tangy cranberries to make one of the tastiest loaves of fruited bread I’ve experienced.

Apple cranberry bread makes a super fast breakfast, needing just sliced quickly for mornings when everyone seems to be running late, or a perfect gift when baked in the mini foil pans and topped with a small bow, as part of a gift of baked treats.

These are a treat that I’m asked to make again and again, and we’ve begun putting them into small muffin cups so they are individual for brunches.

Ingredients:

2/3 cup butter

1 and 1/3 cups sugar

2 apples, pared and chopped

One cup applesauce

4 eggs

1/2 cup milk

4 cups flour

2 tesaspoons baking powder

1 tsp baking soda

1 tsp salt

2 tablespoons lemon rind, grated

1 cup cranberries, or 3/4 cup of dried cranberries such as Crainsins. ™

Cream the butter and sugar in a bowl til fluffly and beat in eggs, one at a time

stir in the applesauce and milk

sift flour, baking powder, baking soda and salt.

add ti creamed mixture, add lemon rind, cranberries and mix well

pour into a greased 5×9 inch loaf pans or four mini loaf pans.

bake at 350 for 50 minutes or until loaves test done with a toothpick, or for the smaller loaves about half hour

cool in pans for ten minues prior to removing them.

Invert onto wire rack to cool.

Each slice of the larger loaves(* each loaf makes twelve slices) will be about 180 calories, 3 grams of protein, 29 grams of carbohydrates, 1 gram of fiber, 6 grams of fat, and 200 mg of sodium.
