With the holidays getting closer, cookies are always in great demand, but these moist chewy cookies, which are quite simple to make will surely be a welcome any time of year.
1 C margerine
1 C brown sugar
1/2 C white sugar
2 eggs
1tsp vanilla
1 1/2 C all purpose flour
1tsp baking soda
1tsp cinnamon
1/2 tsp salt
3 C quick cooking oats
1 C raisins
Preheat oven to 350 F.
In a small bowl sift together flour salt and baking soda.
In a larger bowl combine margerine sugars and vanilla, cream together. Add aggs one at a time and mix well.
Gradually add flour mixture and beat until a soft dough forms. Add oats and mix well by hand. After mixing in oats fold in raisins.
Bake for 10 to 14 minutes or until edges are golden brown.
Makes about 3 to 4 doz cookies.
